No Bake Mexicorn Dip | Quick and Easy!!

If you have been around for a bit you know I love dips. I would eat them for every meal and often do. This dip is one of my favorites because it is so easy and we often have the ingredients laying around. It is perfect for the warmer months because no oven no cooking — just mix the below ingredients together and you’re golden.

In a large mixing bowl combine the following ingredients:

  • 6 oz Cream Cheese
  • 1/2 cup Mayo
  • 1/2 cup Sour Cream
  • 2 cups Shredded Mexican Blend Cheese
  • 1 can Rotel (Rotel has varying heat versions depending on your taste. I usually go with original or mild)
  • 1 can Sweet Corn
  • 1 can Green Chiles
  • Chopped Green Onion

Serve with tortilla chips — preferably scoops.
